Diététique : saveurs et nutrition


Résumé : Dans la Chine ancienne, au niveau de la diététique, les notions de calories, de lipides, de protides et de glucides étaient totalement ignorées. Cette diététique orientale se basait sur la connaissance des saveurs (acide, amer, doux, piquant et salé), des couleurs (vert, rouge, jaune, blanc et noir), de la nature (fraîche, froide, tiède ou chaude) des aliments en fonction des fluctuations du climat  au cours des saisons. Cette diététique des saveurs permettait d’harmoniser l’alimentation en fonction des différents moments de la journée, des saisons mais aussi des maladies. Ainsi, en acupuncture, ces saveurs peuvent être transposées en points shu-antiques (wushuxue) pour traiter certaines pathologies. Summary : In ancient China, at the level of the dietetics, the notions of calories, lipids, proteins and carbohydrates were totally ignored. This asian dietetics was based itself on the knowledge of the flavours (sour, bitter, sweet, spicy and salty), colors (green, red, yellow, white and black), of the nature (fresh, cold, warm, or hot) of food according to the climate variations along the seasons. This dietetics of flavours allowed to harmonize the food according to the various moments of the day, the seasons but also the diseases. So, in acupuncture, these flavours can be transposed into shu-antique points (wushuxue) for treating certain diseases and disorders.Keywords : Flavours – colors - nature of food - shu-antique points (wuxhuxue).
